Lotus & Ming spicy plum sauce
Lotus & Ming soy fusion sauce
Pork belly
Cardamon
Cloves
Star anise
Whole black pepper
Cinnamon

1. Combine Lotus & Ming spicy plum sauce and soy fusion sauce in a bowl.
2. Add in cardamon, cloves, star anise, whole black pepper, cinnamon and chinese five spices. Mix together
3. Take the pork belly with skin on and bone out the centre portion.
4. Line a deep tray with silicon paper, place your pork belly in the tray.
5. Pour sauce mixture onto the pork belly. Cover with another layer of silicon paper. Make sure the pork belly is fully covered in the sauce mixture before placing in the oven.
6. Slow cook the pork belly in the oven on 140°C for 2 ½ Hours
7. Take the pork belly from the oven and allow it to cool. Take another deep tray and put on top of the pork belly. Place a weight on the top of the tray to press down. This will make the pork belly flat and smooth.
8. To serve cut in to portions and pan fry. Serve with your reduced braising sauce.
